Sancerre's only natural winemaker. He works the soil with a horse in a two hectare vineyard located in the domaine in Sury-en-Vaux, using biodynamic viticulture and no chemistry.
Riffault leaves his grapes on the vine late picking them in mid- October when the grapes start to have botrytis.
The wines are fermented in large old barrels with wild yeast. Not filtered or fined. Minimal sulfur added at time of bottling.
The Cuvee names are in Lithuanian, Where Sebastien's wife Jurate is from. Auksinis - Golden, the colour of the grapes.
