Noel works with old, dry-farmed vineyards and traditional winemaking methods, producing what he calls \u003cem\u003evinos sin maquillaje\u003c\/em\u003e — wines “without makeup”. His biodynamic vineyards and minimal-intervention approach celebrate the extraordinary history and diversity of Baja California's vines.\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003eListán is made from exceptionally old Mission vines, planted in sandy-loam soils at around 800 metres in Tecate. The grapes are hand-destemmed and naturally fermented on their skins in concrete for around 25 days before being pressed into stainless steel to rest for a year.
