Half whole bunch, half de-stemmed, left to macerate for just a week. No extraction, with just one pump over at the beginning, aiming to respect the fruit and juice as much as possible. Aged in a combination of stainless steel tanks, amphorae and concrete eggs. Bottled unfined, unfiltered, and with no sulphur.
